A celebration of Atlantic freshness, this dish brings together tender mackerel with a vibrant tomato escabeche. The result is a plate that’s rich in flavor yet effortlessly light — a taste of summer on Portugal’s coast.
Ingredients
Mackerel: 1 mackerel, 200–300 g, Coarse sea salt, Flour.
Tomato Escabeche: 100 g fish stock (fumet), 75 g olive oil, 20 g sliced garlic, 20 g cider vinegar, 1 tomato, finely diced (brunoise), 20 g chopped chives, Chopped parsley, Salt, Pepper, Dried chili.


A dish that’s equal parts simplicity and indulgence, pairing the sweetness of figs with creamy goat’s cheese, golden honey, and the crunch of toasted pine nuts.
2 fresh figs, cut into 8 slices, 1 goat’s curd cheese, sliced into 8 pieces, Pine nuts (toasted), Salt, Pepper, Chopped chives, Olive oil, Honey.


COCKTAIL
Lemon Sorbet (Gulato) + St Germain + Prosecco + Flowers
INGREDIENTS
1 scoop of Lemon Sorbet (Gulato)
20 ml St Germain
Prosecco (to top up)
Edible Flower Petals
STEP BY STEP
In a Champagne coupe glass, serve one scoop of lemon sorbet.
Pour over 20 ml of St Germain.
Select a few edible flower petals and place them on top of the sorbet.
Gently top up with Prosecco over the sorbet


MOCKTAIL
Coconut Water + Premium Tonic Water + Matcha + Lime Cream + Coconut Flakes
INGREDIENTS
100 ml Coconut Water
100 ml Premium Tonic Water
Coconut, Matcha & Lime Cream
Toasted Coconut Flakes (to garnish)
COCONUT, MATCHA & LIME CREAM
50 ml Full-fat coconut milk
10 ml Fresh lime juice
½ tsp Matcha Powder (optional, for colour and depth)
STEP BY STEP
In a Highball glass filled with plenty of ice, add the coconut water and tonic water.
Stir together the ingredients for the coconut cream, then pour over the drink.
Finish with a sprinkle of toasted coconut flakes on top.
