A Toast to Summer: Three Cocktails to Celebrate the Season

Fresh, vibrant and alcohol-free, the Citrus Blush Mocktail balances the bright acidity of grapefruit with the natural sweetness of strawberries for a refreshing drink that feels every bit as celebratory. Ingredients

• 70 ml fresh grapefruit juice
• 50 ml strawberry purée
• 30 ml fresh lime juice
• Grapefruit soda
• Ice

Strawberry Purée

Ingredients

• 500 g fresh strawberries
• 250 g sugar
• 2 g citric acid

Method

Cut the strawberries into small pieces and place them in a container. Cover with the sugar, seal with cling film, and leave to macerate for approximately 4 hours.

Blend thoroughly using an immersion blender for 5–7 minutes until smooth. Strain through a fine sieve, add the citric acid, and stir until fully incorporated. Refrigerate until ready to use.
